Not sure if there is an option to turn this off or if it is a bug.

Test:
Watching Channel A
Press EPG
Scroll to a new channel and then press OK
EPG tv window will display the new channel B.
If you press exit to get out of EPG mode, it reverts back to the original channel A. Would expect it be showing Channel B?

This also intermittently happens when using the left or right arrows next to the OK button.
So if watching channel A
Press right button several times, press ok,
The new Channel B is shown on screen, then press exit to remove the osd info and then Vu changes back to original channel A.

Last query is there an option or a possibility to remove empty channels from the osd or EPG. For example I am using the Silverfox settings for channel listings. In EPG it still renders channels that have no data and this is also true when scrolling through channels using the left/right arrows?

EPG >>> Menu button >>> 'Okay Button' choose the option you want.

Zap = will allow you to preview then, a second press of the ok button will zap to the channel (this is what is currently set)
Zap + Exit = This will zap to the channel and exit epg (no preview)

I don't think you can alter the behavior so that you can zap to preview a channel and exit to that channel your previewing, if you zap to preview a channel it will always exit to the last channel watched unless you press the ok button again to zap to the channel being previewed.

Its the way it is so that if you press epg and preview some channels and don't find something new to watch you can easily exit to go back to what you was initially watching, nice and easy that way.

Theres is also the option for 'LongOK Button' which you can have a play with.

Ad 1: a bug, that will be solved in the next update

Ad 2: That is intentional
