I have only selected sky sd but I want one channel from sky Ireland
Is that possible to add that one channel ?

You can't add it to an automatically created bouquet because it will disappear again, you can add it to favourites or a custom bouquet. As for scanning the channel, you can scan for it manually or do a bouquet scan for sky Ireland, copy the channel you want then disable sky Ireland and scan again.
